Mum shares healthy sausage rolls recipe packed with veg she feeds her kids – and they have no idea


GETTING your kids to eat vegetables can be a challenge at the best of times – and parents are often on the hunt for clever ways to provide their youngsters with a healthy, balanced diet. 

One mum has shared her tried and tested method for getting her fussy kids to eat more vegetables – and they don’t even realise they’re eating them.

The Aussie mum from Melbourne makes sausage rolls from scratch and packs them full of various vegetables.

She said, rather than buying processed rolls from the shop, she makes the sausage rolls for her two sons and hides everything from zucchini to carrot and lentils in her own homemade version.

When it comes to homemade sausage rolls, the recipe varies greatly with everyone using different ingredients to whip up their own.

So, taking to Facebook, the mum-of-two asked: “What does everyone sneak into their sausage rolls?”

“I’ve been told by my three-year-old today that I’m the best cook when he had these for lunch,”as she shared snaps of her home made sausage rolls.

In addition to the sausage mince that make up the sausage roll, the clever mum said she also puts an onion, two diced carrots, one zucchini, two eggs, one can of lentils and crushed garlic in her mix.

She revealed that she also mixes in one packet of hamburger helper with some water and add a ‘squirt of barbecue and tomato sauce’ to make it all stick together and taste delicious.

Hamburger helper is a US product made by Betty Crocker, and while it isn’t available in UK supermarkets, you can pick it up from Amazon – or simply use another seasoning mix.

Healthy Sausage Rolls

INGREDIENTS

  • One onion
  • Two carrots, diced
  • One zucchini
  • Two eggs
  • Sausage mince
  • One can of lentils
  • Crushed garlic
  • One packet of hamburger helper
  • Water
  • Squirt of barbecue sauce
  • Squirt of tomato sauce

METHOD

1. Mix all of the ingredients you intend to include in the sausage roll mine.

2. Halve a sheet of your pastry, make a line on each sheet and roll and cut.

3. Add either some egg or milk wash over the top and bake on 180 degrees Celsius for 40 minutes or until brown.

Her finished treat looks exactly like a traditional sausage roll (without the vegetables), but is far healthier for the kids – and they are none the wiser.

The best part is that the sausage rolls can we frozen and used as great snacks, or a meal, on multiple occasions.

Other mums, and non-parents too, were impressed by the clever trick, with it being dubbed “brilliant” by many.

“This is so good. I normally just use sausage mince and onion,” one person wrote.

While others shared their own variations in response to the original post caption.

“Beef and pork mince, onion, capsicum, zucchini, carrot, small amount of bread crumbs and two eggs,” one mum wrote.

“I also raid the vegetable garden at home and sometimes add beetroot, spinach, fresh herbs and what ever else I can find. All veggies get blitzed up to a paste then mixed with the meat. Kids have no idea.”

Others said they add everything from grated apple to potatoes, broccoli, cauliflower and even peas and corn.
