Italian meatballs

(Serves four)

YOU NEED:

• 500g minced beef
• 2 white onions – one grated, one diced
• 2 tbsp dried Italian herbs
• 4 cloves garlic, crushed
• 1 tsp olive oil
• 1 tbsp balsamic vinegar
• 400g chopped tomatoes
• 400ml vegetable stock
• 1 sprinkle Parmesan cheese
• 1 small handful basil leaves

METHOD: Preheat the oven to 180C fan/200C/gas 6. Place the beef, the grated onion, 1 tbsp herbs, 2 cloves of garlic, and some salt and pepper into a mixing bowl. Stir together to combine.

Line a baking tray with baking parchment. Shape meatball mix into 12 balls, place on the lined baking tray and cook for 25 minutes. To make the sauce, heat the olive oil in a frying pan. Add the diced onion and sauté for two to three minutes, until soft.

Add two crushed garlic cloves and cook for one minute. Add the balsamic vinegar and reduce for one minute.

Add the chopped tomatoes, 1 tbsp of Italian herbs and vegetable stock. Bring to the boil, reduce the heat and simmer for ten minutes.

Add the oven-cooked meatballs to the tomato sauce and cook for five minutes in the pan.

Garnish with parmesan cheese and torn basil.

Can be served with gluten-free pasta.

YOU NEED:

• 4 chicken breasts, cut in 1cm strips
• 35g root ginger, peeled and grated
• 4 tbsp sour cream
• 6 limes – grated zest and juice of 4 limes, plus 2 limes cut into wedges
• 2 tbsp mango chutney
• 2 avocados, sliced
• 6 tortilla wraps
• 1 small bunch coriander, chopped

METHOD: Place chicken, grated ginger, 2 tbsp of sour cream, grated lime zest and juice into a mixing bowl. Stir well to combine.

Cover and place in the fridge to marinate for 30 minutes. Meanwhile, cut two limes into wedges. Put 2 tbsp mango chutney and rest of sour cream into two separate pots and place them on a serving platter.

Heat a griddle pan or frying pan over a high heat. Griddle the marinated chicken in batches, ensuring the chicken is thoroughly cooked. Place the cooked chicken on to a serving platter.

Just before you are ready to serve, cut the avocado into slices and place on the serving platter. Warm the tortilla wraps and serve with the sliced avocado, sour cream, lime wedges, coriander leaves and chicken.
