Iced coffee popsicles are soon to be your favourite summer treat

Iced coffee has never been more popular.

The caffeine drink is not only delicious but it’s a fashion accessory within itself. From Instagram pictures to TikTok montages, iced coffee is an aesthetic crowd pleaser.

And with summer on the way, iced coffee fever will be sweeping the nation’s cafes and streets.

While we love iced coffee and how refreshing it can be, mixing it up is always a good thing.

So when we came across some recipes for iced coffee popsicles, we couldn’t help but get excited.

You see, iced lollies are no longer a kid’s treat after a day at the park. Nowadays, they are grown up with everything from Prosecco popsicles to margarita lollies becoming trendy choices.

Now iced coffee popsicles are next on the list of sophisticated adult treats.

One of the best recipes out there belongs to Sue Moran, the creator of culinary blog The View From Great Island.

So how do you make them?

Sue advises to make your pops just how you make your coffee. The amounts needed will vary depending on the size of the mould you have, so you may need to experiment before you get it right.

To make the caffeine-based popsicles, Sue says you will need to ‘mix up about 2 1/4 cups of cold coffee with cream and sugar to your liking. You’ll need a little extra sweetened cream for the white tips of the pops.’

She explains on her website to ‘set aside 1/3 cup of cream and sweeten it with a little sugar. Stir until completely dissolved.’

Then she says to pour a little cream into each of the moulds and freeze for one hour.

She continues: ‘Mix the coffee, more cream and sugar (to taste) in a glass measuring cup and stir until the sugar is dissolved. You will need about 2 1/4 cups total. Refrigerate until chilled.

‘Carefully pour the chilled coffee mixture into each mold, filling it to the top. Cover the top with foil, and insert the sticks. Freeze until solid.’

Another iced coffee popsicle recipe we love is from modern-glam.com that uses only three ingredients; coconut milk, instant coffee and maple syrup.

The creamy creations are made by simply popping all three ingredients into the blender, placing the mixture into the moulds, and freezing overnight.
