Haggis and Mustard Bites
Serves 20 – total £9.33
Preparation time: 40 minutes
Cooking time: 20 minutes
You need:
- 250g haggis, skin removed and crumbled
- 150g sausage meat
- 1 bunch fresh parsley, finely chopped
- 300g puff pastry
- 2 tsp wholegrain mustard
- 1 egg
- 30g poppy seeds
Method:
- Mix the haggis with the sausage meat in a large bowl using your hands.
- Add the parsley and continue to mix, until well combined then leave to one side for later.
- Lay a pastry sheet flat, keeping it on the plastic. Cut it in half lengthways and spread the mustard on each half.
- Divide the haggis, sausage meat and parsley mixture into two and roll into two long rolls that are the same length as the pieces of pastry.
- Lay each of the haggis and sausage meat rolls on top of each of the pastry pieces then roll the pastry over the meat so the seam is underneath. Press down to seal.
- Beat the egg and brush it onto the pastry then place in the fridge for 20 mins to chill.
- Heat the oven to gas mark 6/200C/Fan 180C.
- Line a baking tray with baking paper.
- Slice the rolls into bite-size pieces roughly 3cm each.
- Snip the top of each and brush again with the remaining egg wash.
- Scatter with poppy seeds before cooking in the oven for 20 minutes or until golden.
- Stand for five minutes then serve and enjoy.
Parmesan and Chicken Bites
Serves 32 – total £10.20
Preparation time: ten minutes
Cooking time: 20 minutes
You need:
- 4 chicken breasts
- 200g Parmesan cheese, grated
- 100g ground almonds
- 2 tbsp Italian dried herbs
- 2 eggs, beaten
- 100g plain flour
- 1 small handful chives, chopped, to garnish
Method:
- Preheat the oven to gas mark 6/ 200C/ 180C fan.
- Cut each chicken breast in half lengthwise. Then cut each length into bite-size chunks.
- Place the Parmesan cheese, ground almonds and dried herbs into a bowl and mix well.
- Place the beaten eggs and flour into two separate bowls.
- Season the flour well with salt and pepper.
- Line two baking trays with baking parchment.
- In batches, dip the chicken bites into the flour, then egg and finally the Parmesan mix. Place onto the lined baking trays.
- Place into the preheated oven and cook for 20 minutes or until the Parmesan bites are golden brown and piping hot.
- Scatter chopped chives over the top to garnish.
- Serve with your favourite dip.
Sparkling Marshmallows
Serves 24 – total £5
Preparation time: five minutes
Cooking time: ten minutes
You need:
- 80g sprinkles
- 175g chocolate
- 200g marshmallows
Method:
- Place the sprinkles into a serving ramekin or bowl.
- Finely chop the chocolate and place it in a heat-proof bowl over a pan of boiling water. Take care that you do not let the bowl touch the water.
- Stir the chocolate continuously until it is smooth and melted.
- Arrange all of the marshmallows on a serving plate.
- Dip them firstly into the melted chocolate and then dip the tip of them into the sprinkles and enjoy.
