If you have extra time on your hands during lockdown, or just need something to entertain the kids for an hour, these lockdown flapjacks are perfect.

They need just three ingredients, which hopefully you have in your storecupboard – oats, butter and golden syrup.

If you have some nuts, dried fruit or chocolate chips, you can add those to make them extra special but the plain ones are also delicious.

And if these get you in the baking mood, we have lots of easy recipes to use up things you might already have at home so you don’t have to make a trip to the supermarket to pick anything up.

Try our peanut butter cookies, banana bread, easy flatbreads or cake recipes for some inspiration.

Ingredients

200g butter

Six tablespoons of golden syrup

330g porridge oats

Method

Heat your oven to 180C and grease a baking tray (around 33cm x 25cm is good but slightly smaller or bigger will work too. You can divide it into two smaller trays as well) with a little butter and then line the base with greaseproof paper.

Melt the butter and golden syrup in a saucepan on a low heat. Stir until the butter has melted into the syrup.

Put the oats in a bowl and pour the butter and syrup over. Mix until well combined.

Pour the flapjack mixture into the baking tray and spread evenly, pushing it into the corners and ensuring the top is even.

Bake in the oven for 20-25 minutes. It should still be slightly soft in the middle when it’s done but will harden as it cools.

Take out of the oven and allow to cool completely before cutting into bars to enjoy.

Store the flapjacks in an airtight tin.

Tip: If you want to add fruit, nuts or anything else, add them to the oats in the bowl before you pour the mixture over the top.

You can also melt chocolate and pour it over the top of the flapjacks when they come out of the oven. Allow to set completely before slicing them up.
