Start off Valentine’s Day in a special way with Mrs Crunch’s delicious breakfast recipes and supermarket deals


GET Valentine’s Day off to a hearty start with a delicious breakfast for two and a cheeky glass of bubbly.

For inspiration, use these tasty treats – at even tastier prices – or for extra brownie points, cook up a delicious home-made breakfast with the help of the recipes below from morrisons.com.

Buttermilk pancakes with red fruits – serves four

YOU NEED:

  • 100g strawberries, hulled and halved
  • 100g raspberries
  • 100g blueberries
  • 4 tbsp maple syrup
  • 150g plain flour
  • ½ tsp baking powder
  • 3 eggs
  • 2 tbsp sunflower oil
  • 100ml buttermilk

METHOD: Place the fruit and three tbsp maple syrup in a saucepan and heat gently for five minutes.

Remove from the heat and set aside. Sift the flour, baking powder and salt into a mixing bowl and make a well in the centre.

Whisk the buttermilk and eggs in a separate bowl and pour into the well, along with one tbsp syrup. Whisk until it is the consistency of a smooth cream.

Heat a little oil in a heavy-based pan over a medium heat and drop tablespoonfuls of the mixture into the hot pan.

Cook for two minutes then flip over with a spatula and cook the other side for one to two minutes, until golden.

Keep the pancakes warm while you cook the remaining batter. To serve, stack up a few pancakes on each serving plate, and top with a spoonful of the fruit. Serve warm.

YOU NEED:

  • 2 toasting muffins
  • 350g asparagus
  • 4 rashers back bacon
  • 3 tbsp white wine vinegar
  • 4 free-range eggs
  • 1 jar hollandaise sauce

METHOD: Split the muffins, toast them and warm some plates. Trim the ends of the asparagus stalks.

Pre heat your grill and cook the bacon, then keep warm. Bring two deep saucepans of water to the boil. Add the vinegar to one of the pans.

Break the eggs into four separate coffee cups or ramekins. Add the eggs to the pan of boiling water with vinegar. They will drop to the bottom, then slowly rise. Cook for three to four mins then remove with a slotted spoon.

Meanwhile, drop loose spears of asparagus into the second pan of boiling water, cook for three-to-five minutes until tender. Drain, keep warm.

Heat the hollandaise sauce gently in a pan. Spread a small amount on each muffin, divide the asparagus between the muffins, then a rasher of bacon, then top with an egg. Spoon over the remaining hollandaise, finish with a twist of freshly ground pepper.
