Selfridges unveils first pop-up kitchen collaboration

Selfridges have opened a new pop-up space in its London Foodhall that will showcase different food industry talent.

Over the rest of the year, the food vendors and chefs that will get the spotlight will change.

First up is Pabellón, a Venezuelan street food brand, who began their residency on March 12.

After three months of serving up two traditional dishes, the award-winning street food brand will make way for a new collaboration which will be announced closer to the date.

Calling it a series of ‘exciting foodie collaborations’, Selfridges’ head of food, Andrew Bird, adds: ‘The space has been designed to be a launch pad for new brands as well as a destination for the capital’s best street food and exciting chef collaborations.’

The Pop Up Kitchen at Selfridges will operate a takeaway service during standard opening hours to begin with, given lockdown rules.

It’s come at the perfect time as spring brings in warmer weather in which to enjoy food outdoors.

The first food residency has kept different dietary requirements in mind, as dishes on the menu can be made vegan or vegetarian and everything is gluten free, boding well for the future collaborations.

Everything comes served in ‘sustainable packaging’ too.

Beef – Slow cooked shredded Brisket, Black Beans, Plantains, Half Arepa, Pico de Gallo, Avocado.

Chicken- Slow cooked shredded Chicken, Black Beans, Plantains, Half Arepa, Pico de Gallo, Avocado.

Vegan – Black Beans, Plantains, Half Arepa, Pico de Gallo, Avocado.

Arepa and sweet potato tempura, £11.50

Handmade grilled corn bread with side of batter sweet potato fries.

Beef – Slow cooked shredded Brisket, Avocado, Cheddar Cheese, Plantains, Pico de Gallo.

Chicken – Slow cooked shredded Brisket, Avocado, Cheddar Cheese, Plantains, Pico de Gallo.

Veggie/Vegan – Black Beans, Avocado, Cheddar Cheese (optional), Plantains, Pico de Gallo.

Sweet potato tempura, £5

Hand cut sweet potatoes dipped in gluten-free batter, twice deep fried for extra crisp texture and season with smoked paprika.

Pabellón’s menu features two classic Venezuelan dishes: Arepa (a traditional corn bread with various filling options) and Pabellon (a rice bowl with a option of toppings and half arepa).

In 2019 and 2020 they won multiple British Street Food Awards – so we think this pop-up kitchen will be popular.
