Raspberry kir royal

(Serves four)

YOU NEED:

  • 125g raspberries
  • 50ml crème de cassis
  • 400ml champagne, or use cava for a cheaper alternative

METHOD:

  1. Divide eight raspberries between four champagne flutes.
  2. Place the remaining raspberries into a food processor and whizz until smooth, then sieve.
  3. Stir in the crème de cassis and divide between the glasses. Top up with champagne to make it a real kir royale.

Sham-pagne

(Serves 40)

YOU NEED:

  • ginger ale, chilled
  • pineapple juice, chilled
  • white grape juice,   chilled
  • Raspberries

METHOD:

  1. In a large bowl combine all the ingredients.
  2. Serve in champagne flutes with a raspberry to garnish.

Mistletoe margaritas

(Serves eight)

YOU NEED:

  • 300g cranberries
  • 150ml lime juice
  • 100g granulated sugar
  • Salt, to taste
  • 2 limes, cut in wedges
  • 600ml cranberry juice
  • 350ml tequila
  • 200ml triple sec
  • 1 kg crushed ice
  • Sprig of mint

METHOD:

  1. In a bowl, add cranberries with one tablespoon lime juice. Drain out lime juice, then add two tablespoons sugar. Pour on to a baking sheet to dry.
  2. Use the remaining sugar, add some salt on a shallow plate and mix. Using lime wedge, wet rim of glass and dip in sugar/salt mix.
  3. Combine cranberry juice, tequila, triple sec, remaining ½ cup lime juice, and ice in a large jug, stir well.
  4. Pour over ice and garnish with mint and sugared cranberries.
