Learn how to make your favourite puddings to sweeten the lockdown – with ingredients that are already in your cupboard


SWEETEN the lockdown by knocking up a pud or two.

With a bit of luck the ingredients may already be in your cupboard so you won’t have to queue at the supermarket. Here are some of my favourites for you to try . . .

SHORTBREAD SORTED: You need two cups of salted butter, cold and cut into bits, a cup of light brown sugar and four half-cups of flour, divided.

Pre-heat the oven to 160C. In a bowl or stand mixer, add butter and sugar. Mix until fluffy, add three half-cups of flour until combined. Use remaining flour to coat a big board as you roll out your dough before chilling it for 30 mins. Cut out your shapes, bake for 15-20 minutes.

UP FOR THE CUP: Mug cakes are a thing of genius — you get that warm, delicious cake in under five minutes and they are so cost-effective. My current favourite is a peanut butter concoction.

Put a tablespoon of peanut butter, one egg and a few teaspoons of sugar in a mug and whisk until blended. Pop in the microwave until your cake begins to rise from the top of the mug, then leave to stand until it cools enough to eat. Add a syrup or sauce if you fancy.

ZEST FOR LIFE: Love lemons? Try this pud. You need 450g lemon curd, 250g self-raising flour and 750ml melted vanilla ice-cream.

Preheat oven to 180C. Pop two thirds of the curd in a baking dish and spread to level, then whisk the flour, melted ice-cream and remaining curd. Pour on to the spread curd and bake for 45 to 50min till golden. Serve right away with a dusting of icing sugar.

CHOCS AWAY: Whip up truffles with cream butter, and choc chips, you do not need to bake them, and can cover with nuts or sprinkles. For a boozy kick, add a splash of Baileys.
