Keep warm this winter with Mrs Crunch’s quick and hearty meat-based meals


EVEN with Veganuary, there are tasty offers in stores for consumers who are not giving meat the cold shoulder.

Supermarkets have a range of deals to tempt carnivores and here are three quick, hearty meat-based dishes to see you through winter.

Quick beef biryani

Serves four – £2.70 per serving

YOU NEED:

  • 380g Morrisons British Beef sizzle steaks, cut into strips
  • 2 tsp oil
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • 3 tbsp curry paste
  • 850ml beef stock, made according to pack instructions
  • 200g frozen peas
  • 1 large handful coriander, freshly chopped
  • 1 large handful parsley, freshly chopped

METHOD:

  1. Heat the oil in a large, heatproof casserole dish with a lid and then cook the onions on a low heat for 5-10 minutes until soft and slightly coloured.
  2. Turn up the heat and add the garlic, curry paste, beef, rice, stock and seasoning, if required.
  3. Bring the mixture to boiling point, turn down the heat, cover and simmer on low for 15-20 minutes.
  4. During the last 2 minutes add the peas and stir gently, cover and continue to simmer until the rice is cooked.
  5. Remove from the heat and garnish with the herbs.
  6. Serve immediately with a selection of Indian relishes, raita and a side salad.

TIP: Spice up your midweek meals with our quick biryani. Use chicken, not beef, for a lighter bite.

Sticky maple-glazed lamb chops

Serves four– £2.15 per serving

YOU NEED:

  • 4 lamb chops
  • 1 lemon, zest grated
  • 2 tbs balsamic or red-wine vinegar
  • 3 tbsp maple syrup or honey
  • ½ teaspoon cinnamon, ground

METHOD:

  1. Season the chops and coat all over with the lemon zest.
  2. Cook under a preheated moderate grill or prepared barbecue for 5-7 minutes on each side.
  3. Meanwhile, in a small bowl, mix together the vinegar, maple syrup or honey and cinnamon.
  4. Brush the chops with the glaze on both sides. Return and cook for a further 1-2 minutes on each side.
  5. Garnish the chops with the extra lemon zest and serve on a bed of grained salad.

TIP: Ready in 20 minutes, this works as a winter warmer and is brilliant for summer barbecues too.

Serves four – £2.23 per serving

YOU NEED:

  • 3 tbsps vegetable oil1 tbsp mixed herbs
  • 1 pack chicken legs
  • 500g potatoes, peeled and cut into chunks
  • 400g parsnips, peeled and sliced
  • 400g carrots, peeled and cut into chunks
  • 2 onions, peeled and sliced

METHOD:

  1. Preheat the oven to 200C/180C fan/gas 6.
  2. Mix 1 tbsp of the oil with the herbs, season, then rub over the chicken legs and transfer into a deep ovenproof dish.
  3. Toss the vegetables in the remaining oil and scatter all around the chicken.
  4. Bake for 40 minutes, until the chicken is cooked through and no pink meat remains.

TIP: PACK a big helping of veggies into this tasty traybake and enjoy a warming supper with family or friends. Use wonky veg if you can find them to keep costs down.
