Choc banana oat cookie

Serves 8

● 2 bananas

● 100g oats

● 50g dark chocolate, finely chopped

Preheat oven to 180C/ 160C fan/gas mark 4. 

Mash the bananas well, then stir in the oats and dark chocolate. Form into 8 balls and put on a lined baking tray. 

Flatten the balls using your hands and bake in the oven for 10-12 minutes, then transfer to a wire rack to cool.

Baked apple

Serves 1

● 1 small apple

● 2 pinches ground cinnamon

● 1 pinch ground nutmeg

● 1 tbsp low-fat plain yogurt

Preheat oven to 200C/180C fan/gas mark 6. 

Core the apple and cut in half. Place in a baking dish, cut side up, and sprinkle over the spices. 

Bake in the oven for 30-35 minutes until soft, then serve with a spoonful of yogurt.

Peanut butter and banana ice cream

Serves 2

● 1 large banana, frozen

● 1 tbsp peanut butter

Blitz the peanut butter and frozen banana together in a blender, then serve immediately or freeze for a few hours to firm up.

Eton mess

Serves 2

● 100g frozen berries

● ½ tsp vanilla extract

● 50g low-fat plain yogurt

● 1 meringue nest

Microwave the berries for 1-2 minutes until soft, then add the vanilla and roughly mash together using a fork. 

To serve, swirl the berries and yogurt together and crumble over the meringue nest.

Serves 2

● 50g dark chocolate

Fill a large bowl with ice and water. 

Break the chocolate into a bowl and pour over 40ml of just-boiled water, then whisk together until the chocolate has melted, which will take about 1 minute. 

Place the bowl of chocolate in the iced water and whisk until it thickens – it will take 2-3 minutes. 

Continue whisking until you have a mousse-like consistency – this will take a further 2 minutes. 

Scoop into small bowls or glasses to serve.
