- LASAGNE: A great-value family meal. A kilo of lean- beef mince costs £6.19 at Asda and I’ve made lasagne for eight with that. But swap the meat for three aubergines (70p each) and three peppers (99p for a three-pack) sliced into the layers and that comes to £3.09. SAVING: £3.10.
- STIR-FRY: This is my go-to staple for a quick dinner. I nearly always use chicken as the main ingredient, then add broccoli and rice. Chicken breasts are £3.19 (for 590g) at Lidl. But chuck out the chicken for Lidl baby sweetcorn, 87p, and spring onions, 35p until tomorrow, and it’s just £1.22 for both. Also from tomorrow Lidl have an Asian- flavours sale, with glass noodles for 49p among other great bargains. SAVING: £1.97.
- CURRY: I can whip up a mean lamb rogan josh but I really rate this veggie version which you can find on Pinterest. Instead of lamb (£4 for 300g diced lamb leg at Tesco) use a tin of chickpeas from the world-food aisle for 40p — 15p less than the Sainsbury’s own-brand — and diced sweet potato (two loose for 60p). That’s a quid in total and it tastes amazing. SAVING: £3.
- A FRY-UP: This is a hard one. If veggie “facon” is not really your thing, you could always ditch the idea of bacon and sausages altogether. Instead, up the veg count with Aldi’s 95p mushrooms and 55p tomatoes. Or treat yourself to a delicious full-English veggie brekkie at Wetherspoons, which comes in at just £3.50 instead of the usual £5. SAVING: Approx £1.50.
