Chinese-style beef in oyster sauce (serves four)

YOU NEED:

  • 1 tbsp sunflower oil;
  • 400g frying steak, cut into strips;
  • 1 onion, peeled and sliced;
  • 2 red chillis, deseeded and sliced;
  • 2 cloves garlic, thinly sliced;
  • 200g carrots, peeled and cut into matchsticks;
  • 200g mushrooms;
  • 100g canned water chestnuts, drained and sliced;
  • 200g pak choi, separated into leaves;
  • 120ml oyster sauce

METHOD: Heat the oil in a large non-stick wok or frying pan and add the steak. Stir-fry over a high heat for two minutes then add the onion, chillis, garlic, carrots, mushrooms and water chestnuts to the pan and stir.

Stir-fry for a further five minutes until the vegetables are just tender but are still crunchy.

Toss in the pak choi with the oyster sauce and 4 tbsp of boiling water, before stir-frying for two more minutes until the juices are bubbling and the pak choi has just wilted.

Serve straight away while hot.

Until Tuesday, buy four items from Iceland’s Chinese takeaway range for £5 including chicken in black bean sauce and chicken chow mein, both 375g and £1.59 each.

Snap up Morrisons Chinese takeaway egg fried rice for £1 and make a meal of it with Morrisons sweet and sour chicken, 350g, for £2.

At Tesco, buy stir-fry vegetables, noodles and a sauce for £2.50. Add your own meat or fish or opt for vegetarian instead.

VEGETABLES

Whip up your own stir-fry, chow mein or Chinese curry with these great buys on the vegetables you need to put in the pan.

Get a Chinese bite with Asda crunchy beansprouts, 35p.

Buy two for £2 on Morrisons baby corn, sugar snap peas or mange tout, all £1.20 each.

Get a bunch of salad onions for 55p at Morrisons.

Save 15p on Kingfisher bamboo shoots, 225g, at Tesco, now 95p.

Aldi has specially selected sweet pointed peppers as one of its “super six” 69p deals.

Morrisons pak choi, 200g, is the best of the bunch at £1.

Kingfisher sliced water chestnuts are down from £1 to 90p at Morrisons.

Special fried rice (serves four)

YOU NEED:

  • 300g basmati rice;
  • 2 tsp vegetable oil;
  • 2 eggs, beaten;
  • 75g frozen peas, defrosted;
  • 75g sweetcorn, canned;
  • 2 tbsp light soy sauce;
  • 30g cashew nuts;
  • 4 spring onions, finely chopped;
  • 1 tbsp coriander, chopped.

METHOD: Cook the rice according to the pack instructions. Heat a wok over a high heat. Add the oil before pouring in the eggs. Use a spatula or spoon to gently break up the eggs as they set.

Once the eggs have started to set, tip in the cooked rice, peas and sweetcorn. Stir and heat through. Pour over the soy sauce and stir again. Finally, stir through the nuts, spring onions and coriander.

Sauces

Save 90p on Uncle Ben’s lemon chicken sauce at Morrisons, now just £1.

Stir up a storm with Asda sweet chilli and garlic stir-fry sauce for 33p. Sharwood’s sweet and sour sauce is down from £1.80 to £1 at Morrisons.

For hot stuff, Sriracha chilli sauce is £1.99 at Aldi.

And marinade sachets – choose from chow mein, teriyaki, spicy salt and chilli or Oriental salt and pepper – are 59p from Aldi.

Save 95p on Lee Kum Kee premium oyster sauce, 255g, at Sainsbury’s, now £2.

Chilli and ginger steamed sea bass (serves four)

YOU NEED:

  • 8 sea bass fillets, skin on and pin-boned;
  • 2 cloves garlic, peeled and thinly sliced;
  • 5cm fresh ginger, peeled and thinly sliced;
  • 4 spring onions, thinly sliced on the diagonal;
  • 2 tbsp low-salt soy sauce;
  • 2 tbsp dry sherry;
  • 50ml fish stock, made from a cube;
  • 1 tbsp vegetable oil;
  • 1 tbsp sesame oil;
  • 1 red chilli, thinly sliced on the diagonal

METHOD: Make some parallel slashes about 1cm apart on the skin side of each fillet.

Place parchment paper in your steamer and lay the garlic, ginger and half the spring onions on top. Place the fish on top of the veg and pour over the soy sauce, sherry and fish stock. Cover and cook for six to eight minutes or until the fish flakes easily with a fork.

While you are waiting for the fish to cook, heat both the oils in a pan until just smoking.

Transfer the cooked fish to a serving plate along with all the liquid. Top the fillets with the remaining spring onions and the red chilli.

Pour the smoking hot oil over the fish, spring onions and chilli. Serve with steamed tenderstem broccoli and mangetout.

Rice, noodles and crackers

Sharwood’s prawn crackers, 60g, are down from £1.34 to £1 at Morrisons.
