Gluten-free Christmas cornflake wreath
Makes 15
YOU NEED:
- 150g gluten-free corn flakes
- 3 tsp green food colouring
- 100g mini marshmallows
- 45g butter
- 1 bag Skittles
METHOD: Melt the butter in a pan over a low heat and once it has melted, add the marshmallows.
Stir continuously until the marshmallows have fully melted. Next, add in the gel food colouring.
Pour out the green marshmallow mix over the cornflakes in a large bowl, making sure you cover the cornflakes evenly.
Line a tray with baking paper and evenly portion out the cornflake mix.
Shape the portions into wreath shapes and top them with red Skittles.
Leave them to set in the fridge before serving.
Gluten-free sausage rolls
Makes 12
YOU NEED:
- Genius gluten-free puff pastry
- 6 gluten-free sausages
- 1 tbsp parsley, finely chopped
- 1 tsp sage, finely chopped
- Freshly ground black pepper Grating of nutmeg
- 1 egg, beaten
METHOD: Preheat over to 200C/180C fan/gas 6. Roll the pastry out to a rectangle approximately 45x30cm.
Take the sausage meat out of the skins and mix with the parsley and sage. Season with freshly ground black pepper and a grating of nutmeg and spread over the pastry.
Brush all edges with a little beaten egg.
Roll the pastry from both ends towards the middle, brushing with the egg as you go.
Cut in to 12 even slices and place on a non-stick baking sheet.
Brush with the egg and bake for 15 minutes. Leave to cool a little and serve.
